Tasting profile
Structure: full-bodied, high tannin, medium acidity, dry
Signature is Chappellet's Napa Valley Cabernet, drawn largely from the family's hillside plantings on Pritchard Hill and rounded out with small amounts of Petit Verdot and Merlot. The house style is mountain Cabernet without excess: blackcurrant and dark plum over cedar, graphite and a dried-herb edge, with cocoa and restrained vanilla from barrel. Tannins are firm and dusty in youth and need time to settle, while the acidity keeps a wine of this weight lively at the table. In 2020 it was the only red Chappellet bottled, the fruit picked ahead of the Glass Fire, and it is correspondingly tight and classically proportioned rather than lavish.
Serving: Serve at 16–18 °C.
