Tasting profile
Structure: medium-bodied, high tannin, high acidity, dry
The straight Barbaresco of Cantina Vignaioli Elvio Pertinace, a growers' cellar in Treiso that also bottles single-vineyard Barbarescos from Nervo and Castellizzano. It is 100% Nebbiolo in the classic, restrained Treiso style: pale ruby turning garnet with age, with small red fruit, dried rose and violet, delicate spice and a faint balsamic, liquorice note. The palate is austere and well structured when young, with firm, fine tannin and lively acidity. Over time it becomes more ethereal and velvety. It needs food: truffled pasta, braised beef, veal or mature cheese.
Serving: Serve at 15–17 °C.
