Tasting profile

Structure: full-bodied, high tannin, medium acidity, dry

Cabernet Sauvignon is a rarity in the Hunter Valley — the humidity and the late-ripening variety are not natural partners, and the region long ago settled on Semillon and Shiraz instead. Where it is grown well it comes out leaner and more herbal than the warm South Australian versions: blackcurrant and dark plum with cedar, dried herb, tobacco and an earthy savour. Medium-full with firm tannin and a savoury finish, from a reserve selection given extended oak. Distinctive rather than typical, and worth trying against a Coonawarra or Margaret River example.
