Max Lake planted here in 1963 and effectively invented the modern Australian boutique winery in doing so — a Sydney surgeon who decided the Hunter could grow Cabernet, in a region everyone else associated with Semillon and Shiraz. The Cabernets is his Bordeaux blend, and it has been proving the point ever since. Cassis and dark cherry with cedar, tobacco leaf, dried herb and a distinct earthiness the Hunter lends. Medium-bodied and restrained by Australian Cabernet standards, with fine tannin and the length to age two decades into something savoury and complex.
