Tasting profile

Structure: medium-bodied, high acidity, off-dry

Valdobbiadene is the steeper and more celebrated half of the Prosecco Superiore DOCG, where vineyards climb near-vertical hogback ridges — terrain so demanding it is farmed largely by hand and has UNESCO World Heritage status. The wines are tighter and more mineral than flatland Prosecco DOC. One label term needs decoding, because it runs counter to intuition: EXTRA DRY IS SWEETER THAN BRUT. The scale runs Brut Nature, Extra Brut, Brut, Extra Dry, Dry, Demi-Sec — so an Extra Dry carries noticeably more residual sugar than a Brut, typically twelve to seventeen grams. Extra Dry is in fact the traditional Prosecco style. Expect green apple and pear with white blossom and citrus, a soft mousse and a gently off-dry finish balanced by brisk acidity.
