Tasting profile

Structure: full-bodied, low tannin, high acidity, dry

La Chèvre comes from Christian Allante and Matthieu Boulanger, who worked for years at Domaine Labet before farming their own 3.2 hectares between Rotalier and Gizia in the southern Jura, biodynamically and without added sulphur. It is a tiny parcel of 90-year-old Chardonnay on white and grey marl, pressed as whole clusters and aged about two years in old demi-muids. Rich and textured, with honey, burnt almond, nuts and baked apple, lifted by vibrant acidity.
