Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Vigne au Daim, named for the deer that visit the parcel, is a Chardonnay from Mathieu Allante and Christian Boulanger, who spent some 15 years at Domaine Labet before founding their 3.2-hectare estate between Rotalier and Gizia in the southern Jura. From 45-year-old vines on grey marl and laminated shale at Gizia, slowly pressed and aged 24 months in old barrels. Lemon and yellow apple with hazelnut, flint and dried flowers over a saline, tensile core.
