Hunter Valley Sémillon, made the way the region has always made it — picked early, no oak, low alcohol, bottled young. Lemon, lime and green apple over a chalky, almost saline acidity, bone dry and deliberately austere in youth. The reward comes later: at seven to ten years it turns toasty, honeyed and waxy without ever losing its acid line, which is why this style is considered one of Australia's genuine originals. Excellent with oysters at either end of its life.
