Toru means three, and that is the wine: Riesling, Gewürztraminer and Pinot Gris blended together by Te Whare Ra, Marlborough's first boutique winery, established in 1979 and now run by Anna and Jason Flowerday. The estate keeps a great many small tanks precisely so each parcel — clone, soil, vine age — can be kept apart and reassembled deliberately, and this blend is the result of that habit. Riesling gives the acid line and citrus, Gewürztraminer the rose and lychee perfume, Pinot Gris the weight through the middle. Off-dry rather than sweet, with the sugar there to carry the aromatics rather than to be tasted. Excellent with spice — this is the bottle to reach for with Thai or Sichuan food. Serve around 8 to 10°C.
