Te Mata's flagship Syrah, and the wine most often cited as the benchmark for the variety in New Zealand — Te Mata is also the country's oldest winery, founded in 1896. Hawke's Bay makes a genuinely different Syrah from Australia's Shiraz, and the two words are worth taking literally here. This is the Northern Rhône register: dark plum and black pepper with violet, smoked meat and cedar from oak, savoury rather than jammy. Full-bodied with ripe well-integrated tannin and a peppery finish. Structure and perfume rather than sheer weight. Built for the table, and it ages properly — a decade is comfortable for a good vintage. Decant it, and give it grilled lamb, venison, duck or something off a charcoal grill.
