Tasting profile
Structure: medium-bodied, medium tannin, high acidity, dry
Rara Avis is Raúl Pérez's rare take on Prieto Picudo, a native red grape of León, from about two hectares of century-old vines on pebbly clay at around 800 metres in Pajares de los Oteros. It is fermented with whole clusters and given long ageing in barrel before release. The style is fresh and savoury rather than heavy: sour cherry and dark berries with dried herbs, pepper and an earthy, spicy edge, on high acidity and fine-grained tannins.
