Giuseppe Quintarelli worked twelve hectares at Negrar, in the heart of the Valpolicella Classico zone, making around fifty thousand bottles a year, and his Amarone is the reference the rest of the appellation is measured against. Corvina, Rondinella and Molinara dry on wooden racks for roughly four months, shedding up to a third of their weight, then macerate two months and ferment slowly before six years in large Slavonian oak casks — bottling comes eight to ten years after harvest. The 2007 was released around 2017 and shows the vintage's generosity in an unusually polished frame: wild cherry and prune, bitter chocolate, licorice and coffee, with a menthol lift and a twist of orange peel. Sixteen and a half degrees of alcohol ride on a glycerine-rich texture that never cloys, and there is more fresh acidity underneath than the weight suggests. Long, layered, and built to outlast most of what sits beside it.
