Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Pascal Doquet is a grower in Vertus at the southern end of the Côte des Blancs, farming organically across parcels there and in the grand cru villages of Le Mesnil-sur-Oger. Horizon is his entry Blanc de Blancs, and it carries the house habits that matter: long lees ageing, minimal dosage, and Chardonnay left to speak for itself. Expect lemon and green apple over a hard chalk core, white flowers, and a toasted almond note from time on lees, finishing dry and distinctly saline. Precise rather than opulent — grower Champagne in the linear, mineral register, and it rewards a proper glass rather than a flute.

Serving: Serve at 6–8 °C.
