Monteviejo is one of the founding estates of the Clos de los Siete project at Vistalba in the Uco Valley, established by a group of French producers led by Michel Rolland. La Chouette pairs Cabernet Sauvignon with Cabernet Franc — a Bordeaux idea transplanted to altitude, where the cold nights keep both varieties herbal and lifted rather than flattening them into ripeness. Cassis and red plum with graphite, violet, dried herb and a leafy Cabernet edge. Full-bodied with firm, fine tannin and bright acidity. Structured rather than plush.
