A Crémant de Bourgogne built from four Burgundy varieties — Chardonnay and Aligoté for citrus lift and nerve, Pinot Noir and Gamay for flesh — with the balance of white and red adjusted each year to the vintage. Every bottling spends at least two years on lees, and it shows: green apple and lemon zest up front, then toast, brioche and a touch of honey behind a fine, creamy mousse. Dry, fresh and rather more serious than its price suggests, at home with oysters as easily as on its own.
