Quebec sits at a latitude that ought to defeat viticulture, and its wine industry rests largely on cold-hardy hybrids bred to survive winters that kill vinifera outright. Le Mas des Patriotes is France Cliche's organic estate in the historic L'Acadie quarter of Saint-Jean-sur-Richelieu in the Montérégie, begun in the early 2000s with a single hectare and now over five; she is among the few women in Quebec to own her own vineyard, and added vinifera in 2016, protecting those vines through winter under a textile sheet that holds snow over them. Le Chaume is her flagship white, built on Frontenac Gris with Pinot Gris and St-Pépin, though the proportions shift each year and Prairie Star has appeared in some vintages. Pale straw, with tropical fruit, ripe apple and banana over white flowers and a pastry note, ample and long with brisk acidity.
