Quebec

**Quebec** is a cold, northern province of eastern Canada with a small but growing wine industry, concentrated south of Montreal near the US border. Its winemakers work at the frigid edge of where grapes can ripen. **Wines & grapes** — Much of the vineyard is planted to cold-hardy hybrid varieties bred to survive harsh winters, producing dry whites, rosés and light reds. The province is especially known for sweet winter specialties, including icewine and its distinctive ice cider. **Character** — A short growing season and brutal winters shape the wines, which tend to be light, fresh and high in acidity, with the cold turned to advantage in the dessert styles. **Good to know** — Some growers physically bury or protect their vines to help them survive the deep winter freeze.
