**Canada** is a cool-climate wine country best known internationally for one specialty: intensely sweet, concentrated Icewine made from grapes frozen on the vine. Beyond that headline, it produces increasingly respected dry table and sparkling wines from a handful of provinces. **Signature wines** — Icewine, most famously from Vidal and Riesling but also red Cabernet Franc; alongside it, crisp Rieslings, Chardonnay, Pinot Noir, and traditional-method sparkling wines. **Key regions** — Ontario's Niagara Peninsula, moderated by the Great Lakes, and British Columbia's Okanagan Valley are the two heavyweights, with smaller pockets in Nova Scotia and elsewhere. **Good to know** — Canada's VQA (Vintners Quality Alliance) system certifies origin and standards, and its Icewine rules are strict: grapes must be naturally frozen and pressed while still frozen, which is why cold-winter Canada became the world's most reliable large-scale producer of the style.
