Not Mendoza — this is Cafayate, in Salta's Valles Calchaquíes, where the vineyards sit at 1,850 metres and rank among the highest on earth. That altitude is the whole story: fierce sun builds ripeness and colour while cold nights hold the acidity, so Malbec from here comes out deeper, more structured and more peppery than the plusher Mendoza style. José Luis Mounier, a Mendoza-born oenologist from a family of growers, bought twenty-five hectares at El Divisadero in 1995 and planted his first vines in 1999; the winery makes around fifty thousand bottles a year and grows Torrontés, Malbec, Cabernet Sauvignon and Tannat on deep, stony, sandy-loam soils. No herbicides or inorganic fertilisers, hand harvest in the cool of the early morning. Intense colour with ruby and violet edges, ripe red fruit with black pepper and capsicum over spice, fleshy and structured with very soft ripe tannins. Serve at 16 to 18°C.
