Tasting profile
Structure: light-bodied, low tannin, high acidity, dry
A Beaujolais Nouveau made by one of the region's most respected natural growers — Foillard is one of the Gang of Four who rejected chaptalisation and heavy sulphur in favour of old vines, native yeasts and minimal intervention, so this is the primeur style taken seriously rather than made industrially. Carbonic maceration gives the category's characteristic crunchy red fruit and floral lift; the farming gives it more depth than the style usually carries. Light-bodied, high in acidity, almost no tannin. Made to be released weeks after harvest and drunk that winter.
