Tasting profile

Structure: light-bodied, low tannin, high acidity, dry

Grottafumata is the small Etna project of Mauro Cutuli and Mariangela Prestifilippo, first bottled in 2017, from three tiny old-vine plots on the volcano's southern slopes. Its Terre Siciliane Bianco (sold as "Lato Sud") is led by Carricante with Catarratto and splashes of Minnella, Grecanico and other local whites, given a few days of skin contact in the old Etna way. Light and ethereal at around 12% alcohol: lemon peel, green apple and white peach with fennel, a faint golden texture and a salty, volcanic finish.

Serving: Serve at 8–10 °C.
