La Cabotte's old-vine Châteauneuf comes from a biodynamic estate better known for its Massif d'Uchaux holdings, and it shows the darker-fruited, herbal side of the appellation rather than the sweetly opulent one. Grenache leads, with Syrah and Mourvèdre for structure and a scattering of the appellation's older varieties alongside. Fermented partly with whole bunches and raised mostly in tank with only a third in used barrels, it keeps a wet-stone freshness and a bright, lifted nose that heavier Châteauneuf often loses — expect black cherry and plum wrapped in garrigue, licorice and crushed rock, carried on fine, powdery tannins.
