Tasting profile
Structure: medium-bodied, medium acidity, dry
Parisy is the rosé Emmanuel Reynaud, the man behind Château Rayas, makes at his Château des Tours estate near Vacqueyras: a blend of Grenache and Cinsault bottled as a simple table wine, outside the appellation system. Do not expect a pale summer quaffer. It is deep in colour, generous and vinous, closer in spirit to a light red than to a Provence rosé. Crushed strawberry, raspberry and red cherry come wrapped in warmth and a soft, rounded texture, with a savoury twist of herbs and pepper on the finish. Serve it cool rather than icy and treat it as a food wine: grilled fish, bouillabaisse, charcuterie or roast chicken. It drinks well on release, and its depth lets it hold a few years longer than most rosés.
