Tasting profile

Structure: full-bodied, low tannin, high acidity, dry

La Part des Anges is Domaine de la Noblaie's white Chinon, from Jérôme Billard's biodynamically farmed estate: a rare white in an appellation where Chenin Blanc covers only a few percent of the vineyards. Chenin from pure tuffeau limestone, picked late with some botrytis but fermented dry and aged about fifteen months in barrel. Ample and complex: acacia and white-fleshed fruit on the nose, then honey, chestnut and quince, with a fresh, mineral finish.
