The Clos des Fèves is Domaine Chanson's monopole, a small walled premier cru high on the Beaune slope, and it is the house's signature wine — Chanson have owned it since the eighteenth century. Since the Bollinger family took over in 1999 the domaine has moved to whole-bunch fermentation and much less new oak, and the wines have become notably more perfumed and precise. Expect red cherry and raspberry with violets and a stemmy spice, over wet stone and undergrowth, with fine tannin and the bright acidity that keeps Beaune from being merely soft. Elegant rather than powerful, and it rewards eight to ten years.
