Tasting profile
Structure: light-bodied, low tannin, high acidity, dry
Dal Zotto's col fondo Prosecco from the King Valley, the Victorian valley where the Dal Zotto family planted Australia's first Glera. Made the old Veneto way: it finishes its fermentation in the bottle and is not disgorged, so it stays cloudy with a fine sediment, a gentle fizz and no dosage. Tart green apple, lemon and pear with a yeasty, bread-dough edge from the lees, bone dry and lightly built. Serve chilled, either decanted clear or swirled to bring the lees into the glass.
