Peter Max is the entry Pinot Noir of Crystallum, the Finlayson brothers' Pinot and Chardonnay specialist, named after the two growers who supplied its first vintage. It is a WO Western Cape blend drawn mostly from the Overberg with fruit from Elandskloof and the Hemel-en-Aarde, made with about half whole bunches, four weeks on skins and a year in French oak. Bright, tart red cherry and raspberry with florals, a savoury forest-floor finish, lively acidity and slightly firm tannin. Good young, it rewards a few years in bottle.
