Tasting profile
Structure: light-bodied, low tannin, high acidity, dry
A single-vineyard Pinot Noir from the high, cool Elandskloof (about 700 m) on the Cape South Coast. It is made by the Finlayson brothers' Crystallum with a small share of whole bunches and about ten months in 500-litre French oak, a modest proportion of it new. It is pure and finely etched: raspberry, wild strawberry and cranberry with orange peel, fynbos and herbal lift. The tannins are sappy and fine, the acidity zippy, and the finish saline.
Serving: Serve at 13–15 °C.
