Gaillac Doux — a sweet wine from one of France's oldest vineyards, on the Tarn upstream of Bordeaux, built on local varieties found almost nowhere else. Mauzac gives its signature note of baked apple and quince, Len de l'El (the name means "far from the eye") adds body, and Muscadelle a floral lift. Sweetness comes from late-harvested overripe grapes rather than noble rot, so it is honeyed and appley rather than the marmalade-and-saffron of a botrytised wine. Full-bodied and sweet, with the acidity to carry it.
