Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Bistrøtage is the Blanc de Noirs Extra Brut Charles Dufour makes from his mother Françoise Martinot's organically farmed vineyards in the Arce valley of the Côte des Bar; each edition is named for its base year (B.20 for 2020), with part of every harvest added to a perpetual reserve in large wooden vats. Pure Pinot Noir with fresh red fruit, red apple and wild strawberry over a taut, mineral palate; precise and energetic.
