Tasting profile
Structure: full-bodied, medium acidity, sweet
Chambers Rosewood have been at Rutherglen since 1858 and hold some of the oldest fortified stocks in the world — material in their soleras predates most countries' wine industries. Topaque is the Australian name for fortified Muscadelle, a style found essentially nowhere else. The wine is made by drying the grapes on the vine, fortifying, then ageing in old barrel for decades, topping younger material into older in a solera so the final blend carries an average age far greater than any single component. Treacle-dark and viscous: raisin, toffee, cold tea, coffee, dried fig and burnt orange, intensely sweet but cut by a bracing acidity that stops it cloying. The finish is measured in minutes.
