Cabernet Sauvignon

Tasting profile

Structure: full-bodied, medium tannin, medium acidity, dry

Probably the most recognisable Napa Cabernet there is, and a wine that divides opinion for exactly the reason it sells: it is picked very ripe and made lush, sweet-fruited and soft. Dense blackberry and black cherry with cocoa, vanilla, mocha and a distinctly plush, almost dessert-like sweetness of fruit, full-bodied with tannin so ripe it barely registers. Whether that is a virtue is a matter of taste, but it is deliberate and consistently executed. Drinks well on release and asks nothing of the cellar.
