Cassaé is made the way Pineau des Charentes is made in Cognac: grape juice is only partially fermented, then blended with aged brandy spirit, which arrests fermentation and leaves the natural sugar intact. Each year a portion goes into French oak casks to age, building a solera in the manner of a fine tawny, and the finished wine combines that aged material with younger, fresher juice. Rich honey in colour and close to syrupy in the glass, it is sweet and complex, with the oxidative depth the solera gives set against the fresh grapiness of the young component. Serve it well chilled as an aperitif, or with fruit and cheese.
