Cavolo is a single east-facing vineyard bottling from Brigaldara, an estate that has spent years deliberately walking its Amarone back towards freshness and drinkability rather than the sweet, heavy style the denomination drifted into. Around four months of appassimento and four years in large wood, with the emphasis on transparency rather than extraction. The result is unusually red-fruited for Amarone — dried violet, red plum and sour cherry over tobacco and a faintly balsamic, almost saline lift — with the alcohol carried more lightly than most and a genuinely dry, savoury finish.
