Amarone della Valpolicella Classico, made by the appassimento method — the grapes dried on racks for three or four months before fermentation, concentrating sugar and flavour until the finished wine reaches around fifteen or sixteen per cent alcohol. Corvina, Rondinella and Molinara give dried cherry and fig over cocoa, leather and warm spice, with a bitter-almond twist on the finish that is the style's signature. Full-bodied and powerful, dry despite the impression of sweetness the ripeness creates.
