Tasting profile
Structure: medium-bodied, high acidity, dry
IDDA is the Etna joint venture of Angelo Gaja and Alberto Graci, and this is its white: Carricante from high vineyards on the south-western slopes of the volcano at Biancavilla and Belpasso, labelled Sicilia because part of the fruit lies just outside the Etna DOC. Taut and mineral, it shows lemon, green apple and white peach with fennel, wild herbs and a smoky, saline edge over bright acidity. Carricante's structure lets it gain honeyed, flinty depth for several years in bottle.
Serving: Serve at 9–11 °C.
