Tasting profile

Structure: full-bodied, medium acidity, dry

Kalk & Stein is the organic estate-level Chardonnay of Weingut Rings in Freinsheim, Pfalz, from cool limestone sites in Kallstadt and sandstone soils in Ungstein; the producer's sheet lists a small share of Weissburgunder alongside the Chardonnay. It is fermented spontaneously in large wooden casks, aged about 18 months on its lees and bottled unfiltered. The result is a dry, full-bodied but taut white with apple, peach and citrus, almond and hazelnut from the lees, and a stony, gently smoky finish. It is approachable on release and gains texture over its first few years in bottle.
