Bheeyo is a skin-contact white from Tinto Amorio, the natural-wine négoce of Anish Patel, built mostly on California Gewürztraminer with a small dose of Zinfandel for colour and grip. Time on the skins turns the variety's perfume into something more savoury: lychee and rose petal, orange peel and apricot, ginger and a black-tea tannin, dry on the finish. An aromatic amber wine made for food.
