JaM Cellars was founded in Napa in 2009 by John and Michele Truchard — the name is their initials — and Butter has since become one of the best-selling Chardonnays in America, to the point that the company has gone to court over the word. This is the California bottling rather than the Napa Valley one, drawn from across the state and finished at Lodi. The style is unapologetic and very well executed: cool fermentation in stainless steel, full malolactic conversion to trade sharpness for creaminess, then time in a blend of oak. Around 14.5% alcohol. Baked lemon and ripe stone fruit, butterscotch and toasted vanilla, a broad and genuinely buttery texture, and a long sweet-oak finish. It sets out to be rich rather than refreshing, and it succeeds.
