Tasting profile
Structure: full-bodied, medium tannin, medium acidity, dry
Freedom is Rosnay's preservative-free Shiraz from its certified-organic family farm at Canowindra in central New South Wales (organic since 1998). Winemaker Sam Statham started the Freedom range in 2019. The fruit comes from vines around 25 years old and is fermented on skins with wild yeast, matured in old oak and steel, and bottled unfined with no added sulphur; the 2022, for example, came in at about 15% alcohol. Expect a ripe, generous, mainstream-style Shiraz. With no preservative it is built to be enjoyed in its first few years, kept cool.
