Marsanne is one of the quiet long-distance runners among white varieties, and north-east Victoria has worked with it for well over a century — Australia holds some of the oldest Marsanne plantings anywhere. Young it gives honeysuckle and white peach with a waxy, lanolin texture through the middle; over a decade it turns to honey, beeswax and toasted nut without ever seeming to change much in between. Acidity is low, which is why it is so often underestimated, but the substance is real and it holds its shape far longer than its freshness alone suggests. Rutherglen's warmth gives it more weight than the cooler Victorian sites. Serve it barely chilled rather than cold, or the texture disappears.
