Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Pascal Janvier is one of the growers who revived Jasnières, the tiny Chenin Blanc appellation on the flint-and-clay slopes of the Loir valley north of Tours. His Jasnières is dry, fermented with native yeasts in stainless steel and kept from malolactic to preserve its acidity. Taut and precise: quince, green apple and lemon with chamomile, a smoky, flinty minerality and a long, piercing finish, gaining beeswax and honeyed depth over a decade or more in bottle.

Serving: Serve at 9–11 °C.
