Angélique and Quentin Bourse farm biodynamically at Azay-le-Rideau in Touraine, so this is a Loire domaine rather than a southern one — but alongside their own parcels they bottle a range built partly on fruit bought from friends in the far south, around Limoux and Carcassonne, and that Languedoc sourcing is where a Grenache Blanc and Clairette blend like this comes from. It is round and gently honeyed, with ripe pear and white peach, chamomile and a dry almond finish, made with minimal intervention so there is a little texture and grip rather than a polished sheen. Drink it young and lightly chilled.
