Tasting profile
Structure: full-bodied, high tannin, high acidity, dry
Pure Saperavi from Koncho & Co in Kvareli, Kakheti, fermented the traditional Georgian way in qvevri (clay vessels buried in the ground) and then aged in oak barrels, about 18 months for recent vintages. Deep, almost inky, with blackberry, black cherry and plum over earthy, savoury and dried-herb notes and a touch of tobacco. Saperavi's high acidity and firm tannins give it the backbone to age. Decanter scored the 2019 92 points. Serve at 17–18°C with grilled meats, rich stews and Georgian walnut dishes.
