Saperavi

Tasting profile

Structure: full-bodied, high tannin, high acidity, dry

Saperavi from the marani (wine cellar) of Alaverdi Monastery in Kakheti, where monks have made wine for centuries. Winemaking was revived in 2006 and the original 11th-century qvevri is still on display. Saperavi is fermented and macerated on its skins in clay qvevri buried in the ground, the traditional Georgian way. Inky and powerful: blackberry, black plum and sour cherry with an earthy, herbal and black-tea depth, on firm, grippy tannins and the grape's naturally high acidity, which let it age for many years. Serve at 17–18°C with grilled meats, Georgian stews or aged cheeses.
