Saperavi

**Saperavi** is a red grape from Georgia, the ancient winemaking country in the Caucasus, with its stronghold in the eastern region of Kakheti. Its name means "dye" or "paint," and it is one of the rare teinturier grapes whose flesh is red as well as its skin. **In the glass** — it delivers a deep, inky, near-opaque colour with dark aromas of black fruit, plum and spice. The palate is full-bodied and powerful, combining high acidity with substantial tannin, giving a wine of real intensity and grip. **Where it grows** — Kakheti is its heartland, where it is made both in modern styles and in the traditional qvevri clay vessels buried underground. It is also grown in neighbouring countries and increasingly further afield. **At the table** — a hearty companion to grilled and roast meats, stews and rich Georgian cuisine. **Cellaring** — its structure and acidity make it a strong candidate for ageing, developing complexity over many years.
