Tasting profile

Structure: light-bodied, high acidity, sweet

A classic fruity-sweet Rheingau Riesling Spätlese from Kloster Eberbach, the former Cistercian abbey founded in the 12th century whose wine estate is now owned by the state of Hesse. Late-picked grapes are fermented only partway, leaving plenty of natural sweetness at a low 7.5% alcohol, balanced by vivid Riesling acidity. It shows white peach, pear, apple blossom and lime with a honeyed core. Lovely on its own, and a natural partner for spicy food, smoked fish and fruit desserts; with age the sweetness recedes and the wine gains honey and petrol notes.

Serving: Serve at 8–10 °C.
