Tasting profile
Structure: light-bodied, low acidity, off-dry
Bacchus is a German crossing — Silvaner and Riesling crossed again with Müller-Thurgau — bred for aroma and reliable ripening rather than for structure. It gives an unmistakable muscat-and-elderflower perfume with grapefruit and nettle behind, and very little acidity to hold it up, which is the variety's defining limitation. Rheinhessen, Germany's largest region and warmest for whites, is where most of it was planted during the post-war expansion. At Kabinett level this is a light, gently off-dry wine of real charm in its first two or three years, when the aromatics are vivid. It is not built to age: without acid the perfume fades and little remains beneath it.
