Bacchus

**Bacchus** is a white grape bred in Germany in the twentieth century, a crossing designed to ripen reliably in cool climates while keeping plenty of aromatic character. **In the glass** — It is prized for its perfume, showing elderflower, grapefruit, gooseberry and green herbs, with a soft, gently floral palate and relatively modest acidity when fully ripe. **Where it grows** — Long a workhorse in Germany's cooler regions, it has found a notable second home in England, where its ability to ripen in marginal conditions makes it a signature aromatic white. It is usually made dry to off-dry and unoaked. **At the table** — Lovely with fresh goat cheese, salads, or delicate white fish. **Cellaring** — Made to be drunk young and fresh, ideally within a couple of years of the vintage.
