Tasting profile

Structure: light-bodied, low tannin, medium acidity, sweet

Clairette de Die made by the méthode dioise ancestrale — one of the oldest sparkling techniques in France, and quite different from the Champagne method despite the superficial resemblance. There is no second fermentation and no added sugar or yeast. The original ferment is halted by chilling, the wine bottled while still fermenting, and it finishes in the bottle on its own sugars before being filtered under pressure. That is why it comes out low in alcohol, around 7 to 8 per cent, and naturally sweet. Predominantly Muscat rather than the Clairette the appellation is named after, so the aromatics are grapey and floral: fresh grape, peach, pear, citrus blossom and honey, with a light frothy bead rather than a firm mousse. Serve very cold, as an aperitif or with fruit. Drink it young.
